‘Tis the season for grilling, and with it, a need to update your grilling menu. This super easy and quick marinade goes great on lighter meats such as chicken, pork and fish. Marinate meat at least an hour ahead of grilling time or overnight for best results. This recipe works best with two to four pieces of meat, multiply as needed.
Easy, Universal Grilling Marinade
1/3 cup olive oil
1/3 cup fresh lemon juice
2 tablespoons Dijon mustard
2-3 cloves of fresh minced garlic
2 sprigs of fresh rosemary, or 1-1 ½ teaspoons dried
Whisk together wet ingredients (oil, juice and mustard) in a medium-sized bowl. Once combined, add in the garlic and rosemary. Mix well.
In a sealable gallon bag, place your meat and pour about two-thirds of the marinade into the bag. Massage and let rest in fridge. Cover and reserve the remaining third of the marinade to brush over the meat for finishing.
