Sweet Potato Biscuits

From Mississippi Hometown Cookbook, featured in the
February/March 2014 issue of Eat Drink Mississippi
2-1/2 cups self-rising flour
1 cup cooked sweet potatoes, mashed
2 tablespoons sugar
1 teaspoon salt
1/4 cup (1/2 stick) butter, softened
Milk, as needed

Combine first five ingredients; add a spoonful of milk at a time until dough is moist. Turn dough onto a floured surface and roll to 1/2-inch thick. Cut with biscuit cutter and bake in 400 degrees F until biscuits are beginning to brown, about 12 minutes. Serve hot.
