Strawberry Iced Tea

From the April/May 2018 issue of Eat Drink Mississippi

3 family sized tea bags
Water
2 cups sugar
1 pound fresh strawberries
1 teaspoon vanilla extract

Bring 3 cups of water to a rolling boil on the stovetop in a small saucepan. Add tea bags, cover, and steep for 9 minutes. In a one-gallon pitcher, dissolve sugar in about a cup of hot water.

While tea steeps, puree strawberries in a food processor or blender. Press puree through a fine mesh strainer to remove any seeds.

Pour steeped tea into the pitcher with sugar water. Add puree and vanilla. Finish filling pitcher with water to make a gallon. Stir.

Refrigerate and serve ice cold.
