Reuben Pinwheel (+ Rachel Pinwheel)

Ingredients:

1 sheet puff pastry

5 slices corned beef, sliced into thin strips

5 slices Swiss cheese, sliced into thin strips

3/4 cup sauerkraut, drained

Russian dressing
Method:

On a piece of parchment paper, roll the thawed puff pastry thin. Line the pastry with corned beef strips, going all the way to the edges. Top with Swiss cheese strips and sauerkraut.

Starting from a short end, roll up tightly into a "jelly roll" shape. Refrigerate for about 1 hour or freeze for 15 minutes (this makes it easier to cut).

Cut into 10-12 1/2" slices.

Arrange on an ungreased baking sheet lined with parchment paper and bake at 375 F for 23-25 minutes or until the pastry is golden and the cheese is melted.

Serve with Russian dressing.
Variations:
Substitute turkey for the corned beef and low calorie Thousand Island dressing to make a Rachel Pinwheel.
Uncooked slices can be frozen. Unthaw before baking as directed.
