Red Velvet Cake Cookies

1 box red velvet cake mix
1/3 cup vegetable oil
2 eggs
1/4 cup (or more if desired) white chocolate chips
Powdered sugar for rolling

Preheat oven to 350 degrees F.

Combine cake mix, oil, and eggs. Mix in white chocolate chips. Batter will be very thick.

Place batter in fridge to chill for about 5-10 minutes. This makes it easier to work with when you roll them out.

Pour powdered sugar into a small bowl, just enough to roll your cookies around in. Set aside

Remove batter from fridge, roll into balls (with your hand or a cookie scoop), roll into powdered sugar to coat, and place on a parchment-lined or non-stick cookie sheet. Flatten each cookie slightly to allow them to cook evenly and spread out as they bake.
Repeat until batter is all used. You can get roughly 24 out of your batter, but it depends on how big you make each cookie.

Bake 10-12 minutes until edges are set.

Serve.

Tip: Spray your hands with non-stick spray before rolling. It makes the process a lot easier and a lot less sticky.
