Food Factor: Easy Veggie Bake

Casseroles are a great way to sneak in vegetables. This Easy Veggie Bake has a cheesy flavor that any picky eater will enjoy.


Look for California blend vegetables in the frozen section of your grocery store if you want to try a mix of broccoli, cauliflower, and carrots. If you’re interested in a different taste, you can substitute any combination of vegetables you like.

Easy Veggie Bake

Ingredients

- 16 ounce bag broccoli, carrots, cauliflower, frozen

- 1 can cream of mushroom soup, 98% fat free and 50% less sodium

- 8 ounce cream cheese, vegetable flavored, softened

- Nonstick cooking spray

- 1/2 cup croutons, seasoned


Preheat oven to 375 degrees F.


Prepare vegetables according to package directions.


Drain and place in a large mixing bowl.


Add soup and cream cheese. Mix well.


Spray an 8x8 baking dish with nonstick spray. Spread mixture into the baking dish.

Sprinkle with croutons. Bake uncovered for about 25 minutes or until bubbly.
