Oven Roasted Onions
This might be the most delicious use of onions we've seen in a long time!
Customize this recipe with your favorite herbs and cheese for a decadent side.
Ingredients:

6 medium onions (yellow, white, or Vidalia)

Extra virgin olive oil

1 stick of unsalted butter

Salt & pepper

Optional: 4-6 Tablespoons fresh thyme, chopped

Optional: 6 oz. goat cheese, divided into 12 half-ounce pieces
Method:

Preheat the oven to 425 degrees.

Peel off the skin and slice each onion in half crosswise so you have two equal halves. If needed, cut a small slice off the ends so the onion halves will rest flat.

Grease standard (cupcake-size) muffin tins generously with olive oil. Place an onion half in each tin, cut side up.

Drizzle each onion with a bit more oil, sprinkle with salt, and top with a pat of butter.

Bake for 40 minutes, basting with onion juices after 25 minutes.

You can stop here and enjoy the onions, OR…

Top each with pepper, herbs and cheese, then return to the oven for 5-7 minutes or until the cheese is bubbly and golden brown.

Serve hot.
Optional: drizzle with honey, add bacon bits with the cheese, or add any other herbs you like. Dill, basil, and rosemary are great options!
