German Apple Coffee Cake

Recipe from Recipes and Remembrances II, St. Joseph Catholic Church 

 

Ingredients for the cake:

​

  • 3 cups all-purpose flour

  • 2 cups sugar

  • 1 cup vegetable oil

  • 4 eggs

  • 2-1/2 teaspoons vanilla

  • 3 teaspoons baking powder

  • Pinch of salt

  • 1/2 cup orange juice

  • 6 apples, peeled and sliced (the church ladies use Granny Smith)

Method:

 

  1. Preheat oven to 350 degrees F.

  2. Grease and flour a bundt pan.*

  3. Beat all ingredients, except apples and topping ingredients.

  4. Pour half of the batter into bundt pan. Add one layer of apples on top of batter, then cover with one-half of the topping mix. Pour remaining batter into the pan.

  5. Sprinkle remaining apples into the batter around the pan.

  6. Bake for approximately 60-70 minutes.

  7. Cool on wire racks, then release cake onto a cake plate.

  8. Sprinkle over the topping and serve.

 

Topping mix (combine)

 

  • 1 cup brown sugar

  • 1 teaspoon cinnamon

 

*Kara's tip: Spray Bundt pan with a baking spray called Bake Easy! It can be found in the craft section next to cake supplies. Cakes are released with ease, no greasing or flouring required.
