Christmas Vegetable Appetizers

 

These yummy appetizers feature easy-to-find ingredients and
with their red and green colors, create a beautiful holiday look
to your next party.

Ingredients: 

  • 1 brick cream cheese (can be light), softened 

  • ¼ cup mayonnaise 

  • Salt and pepper 

  • 1 Tablespoon dried dill 

  • 1 teaspoon onion powder 

  • 1 teaspoon garlic powder 

  • 2-3 large cucumbers 

  • 10-15 cherry tomatoes 

  • Red, yellow, and orange peppers 

  • 1 bunch celery 

  • 4-6 large carrots 

 
Method: 

  1. Combine the softened cream cheese, mayonnaise, and spices. Mix well until you have a smooth paste. 

  2. Wash all the vegetables and pat dry. Using a paring knife or vegetable peeler, cut strips lengthwise from each cucumber to make stripes. Cut the cucumbers into ¾” rounds. 

  3. Remove the core, then slice the peppers into long pieces about ½” wide. 

  4. Cut the celery into sticks about 4” long (approximately as long as the pepper pieces). If desired, cut the wide sticks in half lengthwise. 

  5. Peel the carrots and cut into sticks about 4” long (approximately as long as the pepper pieces). 

  6. Place a teaspoon of cream cheese mixture on top of each cucumber circle. Top with a cherry tomato and sprinkle with more dill. 

  7. Add a little milk to the remaining cream cheese mixture and mix well until it becomes dipping sauce consistency. Divide into juice or shot glasses. Place carrot sticks, celery, and pepper strips into each glass. Serve cold.
