Blueberry Biscuits
Makes about 12 biscuits
Biscuits:
2 cups self-rising flour
1/4 cup sugar
1/4 cup butter, cold and cut into small cubes
1 cup buttermilk
1 cup fresh or frozen blueberries, do not thaw if frozen
Glaze:
1 cup powdered sugar
2 tablespoons milk
1 teaspoon vanilla
To make biscuits:
Preheat oven to 475 degrees.
Line a large baking sheet with parchment paper.
In a large mixing bowl, combine flour and sugar. Add cubed butter and cut in with pastry cutter until butter is size of small peas. Fold in buttermilk until completely combined and no flour remains in bowl. Gently fold in blueberries.
Drop by large spoonfuls onto baking sheet.
Bake for 8-10 minutes or until golden brown. Remove from oven and let cool for 3 minutes. Drizzle with glaze.
To make glaze:
In small bowl, whisk milk and vanilla with powdered sugar until smooth.
