Sugarless, But Still Delicious, Christmas Cookies

1-3/4 cup all-purpose flour

2 teaspoons baking powder

1 teaspoon grated orange rind

1/2 teaspoon salt

1/2 teaspoon cinnamon

3/4 cup orange juice

1/2 cup, minus 1 tablespoon vegetable oil

1 egg

1/2 cup chopped walnuts, lightly toasted

1/2 cup raisins or chopped dried cranberries

 

Preheat oven to 375 degrees. Combine dry ingredients. Add remaining ingredients, mix well. Drop by teaspoon on ungreased baking sheet to make 32-34 cookies. Bake 15-20 minutes until lightly browned on top. Remove from oven and then remove from pan to cool.

 

Note: If you prefer a touch of spice, add 1/4 teaspoon of ground cloves to dry ingredients.
