Dad's Aebleskiver

Ingredients:

 

  • 2 cups all purpose flour

  • 1/4 cup sugar

  • 1/2 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 4 eggs, separated

  • 2 cups sour milk or buttermilk

Method:

​

  1. On the stovetop, heat an aebleskiver pan. Fill each well approx. 1/4 full with oil (about 1-2 Tablespoons of oil per well).

  2. In a bowl, mix the dry ingredients: flour, sugar, salt, baking powder and bakng soda.

  3. Add egg yolks and sour milk and blend.

  4. Whip the egg whites until they form stiff peaks and fold into the batter.

  5. Pour the batter into the wells -- about 3/4 full.

  6. Using a fork or cocktail sticks, rotate the balls as they cook until they form a spherical pancake ball.

  7. Cook until a toothpick comes out clean.

  8. Top with jelly, powdered sugar, syrup, applesauce, or whatever pancake topping you desire.
